- Organize the implementation of action plans, periodical plans of the Department;_
- Hỗ trợ Bếp phó tổ chức quản lý, điều hành và giám sát hoạt động của Bếp bao gồm cả bộ phận Tạp vụ: _Support the Sous Chef to manage, operate and supervise the activities of the Kitchen including the Appliance department:_
- o Giám sát việc phân ca, bố trí nhân lực, đảm bảo đủ nhân sự vận hành hoạt động trong bộ phận;
- Supervising the division of shifts, allocating human resources, ensuring sufficient personnel to operate the department;_
- o Tuân thủ tiêu chuẩn vệ sinh an toàn thực phẩm (theo tiêu chuẩn ISO, HACCP );
- Compliance with food hygiene and safety standards (according to ISO, HACCP standards);_
- o Chịu trách nhiệm kiểm soát chất lượng thực phẩm, nguyên vật liệu đầu vào, đảm bảo vệ sinh an toàn thực phẩm;
- Responsible for controlling food quality, input materials, ensuring food hygiene and safety;_
- o Tổ chức kiểm soát quy trình chế biến, chất lượng món ăn (cả về mùi vị, quy cách sản phẩm ), đảm bảo tất cả các món ăn được cung cấp tới khách hàng đồng đều và đạt tiêu chuẩn thương hiệu;
- Organize the control of the processing process, the quality of the dishes (both in terms of taste, product specifications, etc.), to ensure that all dishes are provided to customers evenly and meet brand standards;_
- o Tổ chức kiểm tra, kiểm soát vấn đề vệ sinh an toàn thực phẩm trong Bếp
- Organize inspection and control of food hygiene and safety issues in the Kitchen_
- o Thực hiện và kiểm soát công tác PCCC, an toàn lao động của các khu vực do bộ phận quản lý;
- Implement and control the work of fire prevention and fighting, occupational safety of the areas managed by the department;_
- o Chịu trách nhiệm trang trí, sắp xếp quầy thực phẩm đẹp mắt, phù hợp với thiết kế và định hướng ẩm thực của khách sạn.
- Responsible for decorating and arranging food stalls beautifully, in accordance with the design and culinary orientation of the hotel._

JOB REQUIREMENTS
- Kiểm soát lượng thức ăn nấu phục vụ khách. Đảm bảo lượng thức ăn thừa cuối mỗi bữa ăn không vượt quá 10% so với lượng thức ăn nấu cho khách
- Control the amount of cooked food served to guests. Ensure that the amount of leftovers at the end of each meal does not exceed 10% of the amount of food cooked for guests_
- Trực tiếp tham gia nấu các món ăn khi cần hoặc theo yêu cầu của cấp trên.
- Directly participate in cooking dishes when needed or at the request of superiors._
- Kiểm tra các đề xuất mua hàng của bộ phận, đảm bảo tiết kiệm chi phí và đúng thẩm quyền phê duyệt;
- Checking the department's purchase proposals, ensuring cost savings and approval authority;_
- Phối hợp với Phòng Cung ứng để cập nhật hàng hóa, nhất là vào mùa cao điểm, luôn đảm bảo nguồn hàng chất lượng, dồi dào;
- Coordinating with the Supply Department to update the goods, especially in the peak season, always ensuring an abundant and quality source of goods;_
- Tổ chức việc bảo quản và giám sát chặt chẽ hàng hóa tại Kho để kịp thời phát hiện và xử lý các vấn đề bất cập, chưa hợp lý;
- Organize the preservation and close supervision of goods at the Warehouse to promptly detect and handle inadequacies and unreasonable problems;_
- Lên kế hoạch đẩy mạnh tiêu thụ các mặt hàng cận hạn, chậm chuyển động, tránh tồn đọng vốn;
- Planning to promote consumption of near-term, slow-moving products, avoiding capital backlog;_
- Phối hợp với bộ phận Kỹ thuật về việc kiểm tra, sửa chữa và bảo dưỡng định kỳ cơ sở vật chất, máy móc, công cụ dụng cụ; đề xuất mua mới/ thanh lý/ hủy nếu cần thiết;
- Coordinating with the Technical Department on periodic inspection, repair and maintenance of facilities, machinery, tools and equipment; propose to buy new / liquidate / cancel if necessary;_
- Phân công trách nhiệm cho Senior Cook, thủ kho của Bếp
- Assign responsibilities to Senior Cook, Kitchen's storekeeper_
- Đề xuất với Bếp trưởng trong trường hợp có nhu cầu nâng cấp, cải tạo bếp, mua mới trang thiết bị, đồ dùng, công cụ dụng cụ trong bếp; chịu trách nhiệm quản lý tài sản của Bếp như thiết bị, đồ dùng, dụng cụ nhà Bếp. Báo ngay với Bếp trưởng nếu xảy ra hư hỏng, mất mát.
