We are looking for a **Director of Restaurant for Melia Hanoi - Vietnam**
**Mission**:
Direct and organize the Food & Beverage function within the hotel’s restaurant and bars in order to maintain high standards of food and beverage quality, service, and merchandising to maximize profits.
The performance of the Director of Restaurant is assessed on their effectiveness as an executive member, the business results of their unit, the management skills developed and effectively applied by the individual and the training and development of their staff.
The Director of Restaurant will be required to conduct their duties in a courteous, safe and efficient manner, in accordance with the hotel’s policies and procedures, ensuring that a high level of service is maintained.
**Main responsibilities**:
- Provide a professional, advisory and executive support service to the Director of Food & Beverage to assist in meeting the strategic goals of the establishment.
- Develop and implement Restaurant/Bar promotions, strategies and special events in conjunction with Director of Food & Beverage, the Executive Chef and the Director of Sales and Marketing.
- Liaise with the Director of Food & Beverage and Executive Chef on menu engineering and portion control, ensuring the highest food standard is achieved whilst selling at the correct prices.
- Participate with the Director of Food & Beverage, Executive Chef and outlet managers in the creation of attractive and merchandising menus designed to attract a predetermined customer market.
- Drive corporate or Hotel specific programs that affect guest satisfaction and profitability in the Restaurants and Bars
- Implement control procedures to minimise errors, fraud and waste.
- Ensure that the property is seen as being the principle innovator in the market place.
- Resolve customer complaints as appropriate to maintain a high level of customer satisfaction and quality. Oversee to ensure all guests are being treated in an efficient and courteous manner and that all MHI standards are being applied.
- Assist and prepare monthly outlook/forecast reports in conjunction with the Director of Food & Beverage. Develop, recommend, implement and manage the Food and Beverage Division’s annual budget, business / marketing plan, forecasts and objectives to meet / exceed management expectations.
- Implement and maintain training systems to ensure that associates have the necessary framework and skills to perform their job efficiently and effectively.
- Align plans with business strategy; understand short
- and long-term impact of business decisions; demonstrate knowledge of and educate others about how one's work aligns with the overall business/brand strategy, and ultimately shareholder value
- Add value through revenue growth and operational efficiency through process improvement; understand and focus on the key drivers of sales, associate and customer satisfaction, profitability, and quality
- Regularly review and evaluate the degree of customer acceptance of the individual restaurants and bar service. Recommend to management new operating and marketing policies whenever declining or constant sales imply dissatisfaction by the customers, a material change in the make-up of the customer market, or a change in the competitive environment.
- Demonstrates an ability to plan use of financial resources according to departmental goals and/or control departmental costs. Requires a familiarity with most effective uses of available resources.

**Main requirements**:
- Two years’ experience in a similar position or multi-outlets operation in hotels or free-standing restaurants.
- Vietnamese language at professional level verbal and in written is required.
- Excellent English language skills.
- Strong knowledge to develop and implement promotions, marketing strategies, menu items and presentations.
- Good Leadership skills and adaptability to different cultures.
- Financial and Budgeting experience.
- Strong knowledge of health codes and food safety.
